As the weather warms, it’s the perfect time to experiment with homemade fruit syrups, bringing natural sweetness and depth to your daily cup. This Banana Pancakes Latte is an easy (cozy) upgrade, pairing rich espresso with a silky banana syrup that tastes just like your favorite stack of flapjacks.
Ingredients:
Banana Syrup:
- 1 ripe banana
- 2 heaping scoops of sugar (we used coconut)
- 3 tbsp maple syrup
- 1 tsp cinnamon
- ½ tsp nutmeg
- Pinch of sea salt
- A dash of oat milk
Latte:
- Double shot of Acrobat Espresso
- Oat milk
- More cinnamon
- Ice
Instructions:
Making the Syrup:
- In a pan over low heat, sauté the banana, sugar, maple syrup, cinnamon, nutmeg, sea salt, and oat milk for 5–7 minutes, stirring occasionally.
- Transfer the mixture to a container and use an emulsifier to blend until smooth and thick.
Building the Latte:

4. Pour in oat milk and ice, then stir well.
5. Pull a double shot of Acrobat Espresso and pour it over the top.
